For the vinaigrette:
3 tablespoon finely chopped shallots
6 tablespoons red wine vinegar
3 teaspoon freshly grated ginger
3 tablespoon soy sauce
6 tablespoons olive oil
salt to taste
freshly ground black pepper
For the salad:
9 pounds baby greens, rinsed
18 mandarin oranges, peeled and separated into segments
6 tablespoons sliced almonds
Directions:
For the vinaigrette:
1. Place all the ingredients in a container with a tight-fitting lid. Shake well.
2. Add the salt and pepper to taste.
For the salad:
1. Toss the greens with the vinaigrette in a bowl.
2. Transfer to a serving plate and garnish with the mandarin orange segments and almonds.
