2 cups water
1 cup honey
2 tablespoons freshly grated ginger
1 cup fresh lemon juice
2 cups sparkling water
Garnish: mint sprigs and lemon wedges
Directions:
1. Combine the water, honey and ginger in a small saucepan. Bring the mixture to a boil over medium heat to make a syrup. Turn the heat off and let the mixture steep for 10 minutes. (For a stronger ginger flavor, let the mixture steep for 20 minutes or more.) Strain the syrup and let it cool.
2. Combine the cooled syrup and lemon juice in a pitcher.
3. Fill 4 tall glasses with ice and divide the ginger-lemon mixture among them. Top each glass off with sparkling water and garnish with mint sprigs and lemon wedges.
