6 very ripe plantains
olive oil spray
salt to taste
Directions:
1. Place 2 nonstick baking sheets in the oven and preheat to 450°F.
2. Cut the ends off the plantains and peel. Cut each plantain lengthwise sharply on the diagonal into 1/2-inch slices.
3. Spray the hot baking sheet with oil. Arrange the plantain slices in a single layer on top. Spray the tops of the plantains with oil.
4. Bake the plantains until golden brown and very tender, 10 to 15 minutes, turning once with a spatula.
