5 cups pears, peeled, cored and cut into chunks
3/4 cup water
2 tablespoons lemon juice
1/2 cup honey
cinnamon to taste (optional)
nutmeg to taste (optional)
freshly ground black pepper, to taste (optional)
Directions:
1. Place the pear chunks in a large, heavy-bottomed, stainless-steel pot. Add the rest of the ingredients.
2. Bring to a boil over medium-high heat, stirring occasionally. Simmer until the fruit becomes tender, about 20 minutes. Stir in freshly ground black pepper.
3 Puree in a food mill or blender.
4. Cool and refrigerate.
