6 filet mignons of bison (buffalo), about 6 oz. each
salt to taste
freshly ground black pepper
Directions:
1. Preheat the grill on high.
2. Season the bison with salt and pepper on both sides.
3. Grill the bison for 3 to 4 minutes on each side, depending on thickness and the desired degree of doneness. Serve with Onion Relish or Roasted Tomatoes and Cipollini Onions with Ancho Chilis
