For the cucumber salad:
2 large cucumbers, peeled, halved, seeded and sliced
1 small red onion, thinly sliced
1 tablespoon chopped fresh dill
1 tablespoon fresh lemon juice
1 teaspoon extra virgin olive oil
salt to taste
For the horseradish sauce:
1 tablespoon prepared horseradish
1/2 cup non-fat sour cream
freshly ground black pepper
For the salmon:
4 King or Copper River salmon fillets, about 4 to 6 ounces each
2 teaspoons olive or canola oil
Directions:
For the cucumber salad:
1. Combine the cucumbers, red onion, dill, lemon juice and olive oil in a large mixing bowl. Season to taste with salt.
For the horseradish sauce:
1. Combine the horseradish and sour cream in a small bowl and season to taste with salt and pepper.
For the salmon:
1. Preheat the grill to medium-high.
2. Brush the salmon fillets with oil and season with salt and pepper.
3. Grill the salmon until it is just cooked through, about 5 minutes on each side.
4. Serve the salmon with a dollop of horseradish sauce and a large spoonful of cucumber salad.
