For the tomato-avocado relish:
1/2 cup freshly diced tomatoes
1 tablespoon extra virgin olive oil
2 tablespoons balsamic vinegar
2 tablespoons chopped red onion
2 tablespoons chopped scallions
1/2 tablespoon seeded, chopped jalapeño pepper
1/2 teaspoon chopped, fresh cilantro
1/2 avocado, diced
salt and pepper to taste
For the swordfish sandwiches:
4 swordfish fillets, about 5 to 6 ounces each
non-stick cooking spray
salt to taste
freshly ground black pepper
4 large whole grain sandwich buns
Directions:
For the tomato-avocado relish:
1. In a medium sized mixing bowl, combine the tomatoes, olive oil, vinegar, onion, scallions, jalapeno pepper, and cilantro. Gently stir in the avocado. Add salt and pepper to taste.
For the swordfish sandwiches:
1. Preheat the grill to medium-high.
2. Spray the grill grate with non-stick cooking spray. Season the fillets with salt and pepper.
3. Grill each swordfish fillet for about 3 minutes on each side, depending on the thickness of the fish.
4. Place one fillet and 1/4 cup of tomato-avocado relish on each sandwich and serve.
