4 5-ounce chicken breasts, pounded thin with a mallet
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 1/2 tablespoons olive oil
Directions:
1. Season the chicken breasts with salt and pepper, then drizzle with olive oil.
2. Place a saute pan large enough to accommodate all the breasts over medium-high heat. Add the chicken and lower the heat to medium. Cook until well-browned on one side, about 4 to 5 minutes. Turn the breasts over and cook 2 to 3 minutes more.
