1 1/2 teaspoons olive oil
2 cloves garlic, minced
1 small onion, chopped
2 small green bell peppers, chopped
1 cup tomato sauce
16 ounces fresh or frozen cheese ravioli
salt to taste
freshly ground black pepper
2 tablespoons freshly grated Parmesan cheese
Directions:
1. Bring a large pot of salted water to a simmer.
2. In a large skillet, heat the oil over medium heat. Add the garlic, stirring, until fragrant, about 1 minute. Add the onion and peppers and cook unitl the vegetables begin to soften, about 5 minutes.
3. Add the tomato sauce and bring to a simmer. Cook until the vegetables are tender, about 5 to 10 minutes. Season with salt and pepper.
4. Meanwhile, cook the ravioli in the simmering water until they float, about 5 to 7 minutes. Drain and toss with the sauce. Sprinkle with the Parmesan cheese and serve immediately.
