4 veal cutlets, about 4 to 6 ounces each
1 1/2 tablespoons olive oil
1 tablespoon freshly chopped tarragon
1 tablespoon freshly chopped thyme
Directions:
1. With a meat pounder, flatten the veal cutlets between 2 sheets of waxed paper. Press the herbs into the veal.
2. Heat the olive oil in a heavy oven-proof skillet until it begins to smoke. Cook each side of the veal until golden brown, about 2 minutes per side.
