1/2 cup pureed cantaloupe (or other melon)
1 tablespoon freshly grated ginger
2 tablespoons olive oil
2 tablespoons lemon juice
salt and pepper
Directions:
1. Whisk all the ingredients together in a bowl. Marinate in the refrigerator for at least 30 minutes or overnight.
Note: Use to marinate chicken breasts or scallops. Do not re-use marinade. The possibility of bacteria build-up is present.
