2 shallots, minced
2 cloves garlic, minced
1 tablespoon fresh oregano, chopped
1/4 teaspoon cilantro, chopped
1 teaspoon thyme, chopped
1/4 cup red wine vinegar
1/4 cup balsamic vinegar
1/4 cup water
1/2 cup non-fat yogurt
1 teaspoon freshly ground black pepper
1 scallion, chopped
Directions:
1. Place all of the ingredients, except the scallions, in a blender or food processor and puree 15 to 20 seconds. Taste and adjust seasoning.
2. Stir in chopped scallions and refrigerate until use.
