1 pound lean lamb (leg or loin), thinly sliced
4 pieces pita bread
2 tomatoes, sliced or chopped
1 medium red onion, thinly sliced
1/2 cucumber, peeled and thinly sliced
lettuce leaves
4 tablespoons Minted Cucumber Dip (see recipe)
Directions:
1. Spray a medium-size skillet with non-stick cooking spray and warm over medium heat. Add the lamb slices and saute on both sides until the meat is pink, about 5 minutes in all.
2. To assemble the sandwich, spread a tablespoon of Minted Cucumber Dipon the Pita bread. Add a few slices of lamb and top with tomato, onion, cucumber and lettuce. Fold up the pita or serve open face with a knife and fork.
