For the lobster salad:
16 ounces cooked lobster meat
1/2 cup non-fat mayonnaise
4 ounces canned artichoke hearts, rinsed and chopped
salt and pepper to taste
For the sandwiches:
4 small loaves of focaccia, sliced in half
4 lettuce leaves, green leaf, bibb or romaine, shredded
Directions:
For the lobster salad:
1. In a mixing bowl, combine the lobster, mayonnaise, artichoke hearts, salt and pepper.
For the sandwiches:
2. Lay the focaccia slices out on a work surface and divide the lobster mixture among the sandwiches. Top the sandwiches with the shredded lettuce and place the focaccia tops on each sandwich.
3. Cut the sandwiches in half on the diagonal and serve.
