4 tablespoons low-fat cream cheese, or goat cheese
1 teaspoon chopped fresh basil
salt to taste
freshly ground black pepper
3-4 portobello mushrooms, grilled sliced
6 slices focaccia or other good quality bread, sliced in half, lengthwise
1 roasted red pepper, cut into strips
6 cherry tomatoes
1 carrot, shredded
Directions:
1. Have kids mix the cheese, basil, salt and pepper together. Set aside.
2. Everyone can assemble the sandwiches. Spread the bread with the cheese mixture, then use the vegetables to make a face.
