1 tablespoon olive oil
1 large onion, sliced
1 sprig fresh thyme or 1/4 teaspoon dried
salt to taste
freshly ground black pepper
1/4 cup low-sodium chicken stock or beef stock
Directions:
1. Heat the olive oil in a skillet over medium heat. Add the onion, thyme and a little salt and pepper. Cook until the onions begin to get soft. Turn the heat up a little and cook until the onions turn golden brown. Adjust the salt and pepper to taste.
2. Add the stock and continue to cook for about 5 more minutes.
3. Remove the onions from the heat and let cool for at least 15 minutes.
4. Puree the onions in a blender or food processor until smooth. Add more stock if the sauce is too thick. Reheat the sauce and serve.
