5 medium shallots
1 bottle red wine
1/2 teaspoon salt
1/2 teaspoon fresh lemon juice
4 ounces margarine or butter, 1 stick
Directions:
1. Blend the shallots with 1 or 2 tablespoons of the wine in a blender until pureed.
2. Boil the pureed shallots and the rest of the wine in a large, heavy saucepan until reduced to about 1 cup, about 20 minutes. Remove from the heat. (This can be made in advance and stored, covered in the refrigerator for up to 2 days. Warm on top of the stove before adding the butter.)
3. Whisk in the butter. Add the salt and lemon juice.
4. Taste and add more salt if needed.
