1 cup sugar (more or less, depending on taste)
3/4 cup water
4 cups sliced rhubarb
Directions:
1. Bring the sugar and water to a boil over high heat. Simmer for 5 minutes. This will dissolve the sugar and make a syrup.
2. Add the rhubarb and continue to cook for about 15 to 20 minutes, until it falls apart completely and thickens slightly.
3. Serve over Golden Grain Griddle Cakes for a weekend breakfast or over low-fat frozen yogurt for a seasonal dessert.
For Safekeeping: Cool the compote. Refrigerate up to 5 days.
