1 bag (17.6 ounces) Castellana Orecchiette Pasta
1/2 cup Rising Sun Farms Oil-Free Roasted Garlic Galore Vinaigrette & Marinade
1 cup chopped red pepper
1/2 cup chopped scallions
2 tablespoons chopped, fresh basil
2 tablespoons chopped, fresh Italian parsley
salt to taste
freshly ground black pepper
Directions:
1. Bring 1 gallon of well-salted water to a boil over high heat. Add the orecchiette and cook until it is al dente, about 12 to 14 minutes. Drain well.
2. Place the orecchiette in a large bowl and toss with the vinaigrette. Add the red pepper, scallions and herbs and mix to combine. Season to taste with salt and pepper. Serve at room temperature or refrigerate for later use. Bring to room temperature before serving.
