8 large very ripe tomatoes, (about 3 pounds) cored, cut in half and with seeds scooped out
1 tablespoons olive oil
salt, to taste
pepper, to taste
2 tablespoons freshly minced parsley or basil
Directions:
1. Heat the oil in a sauce pan over a medium heat.
2. Add the tomato halves and stir to coat with oil.
3. Continue cooking for 6 to 8 minutes, stirring gently, until the tomatoes become soft but keep their shape. Season with salt and pepper to taste and garnish with fresh herbs.
