2 tablespoons sugar
1/4 cup water
2 medium cucumbers
4 medium tomatillos
15 fresh basil leaves
2 tablespoons champagne vinegar
2 tablespoons chili oil, or olive oil (optional garnish)
tabasco or cayenne pepper to taste
salt to taste
2 tablespoons red pepper, diced for garnish
a few watercress leaves for garnish
Directions:
1. Dissolve the sugar in water in a small saucepotover medium heat for about 2 minutes.
2. Remove from the heat.
3. Peel and chop cucumbers into 1 inch pieces.
4. Remove husks from the tomatillos and rinse sticky surface. Cut into quarters.
5. In a blender, blend cucumbers, tomatillos, basil, sugar syrup and vinegar until smooth.
6. Finish by drizzling with chili oil or olive oil (optional), tabasco and salt to taste.
7. Garnish with the red pepper and watercress and serve.
