3 large bell peppers (red, yellow or green), cut in quarters, stems removed and seeded
2 teaspoons olive oil
kosher salt to taste
freshly ground black pepper
Directions:
1. Preheat the grill to medium.
2. Brush the peppers on both sides with olive oil. Season with salt and pepper.
3. Grill the peppers until they begin to get lightly browned on the outside and tender, about 5 minutes per side.
