1 large sweet Vidalia onion (or other variety such as red or yelow), cut into slices about 1/2 inch thick
2 teaspoons olive oil
salt, to taste
pepper, to taste
Directions:
1. Preheat the grill to medium-high.
2. Brush the onion slices with the olive oil on each side. Season lightly with salt and pepper.
3. Grill until tender, about 3 to 4 minutes per side. Use a spatula to turn the slices in order to keep the rings together.
