3 large bell peppers (red, yellow or green), cut in half, stems removed and seeded
2 teaspoons olive oil
kosher salt to taste
freshly ground black pepper
Directions:
1. Preheat the oven to 400°F.
2. Place the peppers on a baking sheet in a single layer, cut side down and brush with olive oil. Season with salt and pepper.
3. Roast the peppers on the top rack of the oven until they begin to get lightly browned on the outside and tender, about 30 minutes.
