2 medium sized eggplants, cut into 2-inch cubes or strips
2 teaspoons olive oil
kosher salt to taste
freshly ground black pepper
Directions:
1. Preheat the oven to 400°F.
2. Gently toss the eggplant with the olive oil, salt and pepper.
3. Spread the eggplant out on a baking sheet in a single layer.
3. Roast the eggplant on the top rack of the oven until they begin to get tender on the outside, about 30 minutes.
