4 pounds red potatoes, quartered
4 cloves garlic, chopped
1 tablespoon fresh rosemary, chopped
2 tablespoon olive oil
1/4 cup balsamic vinegar
1 tablespoon rice wine vinegar
1 onion, sliced
1 red bell pepper, cut into thin strips
1 yellow bell pepper, cut into thin strips
1 green bell pepper, cut into thin strips
salt, to taste
freshly ground black pepper
non-stick cooking spray
Directions:
1.Preheat oven 400°F
2.In a large bowl, toss the potatoes, rosemary, olive oil, and vinegars together. Add the onion and bell bells and mix well, to combine.
3.Spray a non-stick baking pan with non-stick spray. Spread the potato mixture on the pan and sprinkle it with salt and pepper. Place the pan on the center rack of the oven and bake for 40-45 minutes or until the potatoes are tender.
4.Transfer to a serving dish and garnish with the sprigs of rosemary. Enjoy!!
