2 teaspoons olive oil
2 large onions (red, yellow or sweet), cut in half and then sliced 1/2 inch thick
salt to taste
freshly ground black pepper
Directions:
1. Heat the olive oil in a 10" skillet over medium-high heat.
2. Separate the onion rings as you add them to the skillet, add the salt and pepper and cook with the olive oil until the onions become tender and golden, about 5 to 10 minutes depending on desired doneness. Remove from the skillet and serve.
