2 tablespoons low-fat sour cream
1 tablespoon freshly grated horseradish
1 tablespoon Dijon mustard
1 tablespoon olive oil
1 teaspoon crushed garlic
1 pound spinach, washed
salt to taste
freshly ground black pepper
Directions:
1. In a small bowl, combine the sour cream, horseradish and mustard. Set aside.
2. Heat the olive oil in a 10" skillet over medium-low heat.
3. Add the garlic and ginger and cook for 1 minute.
4. Add the spinach, salt and pepper and toss with the olive oil mixture until the spinach just begins to wilt. Remove from the heat and gently toss with the sour cream mixture before serving.
