2 teaspoons olive oil
2 medium summer squashes, cut into 1/2 inch thick slices
salt to taste
freshly ground black pepper
Directions:
1. Heat the olive oil in a 10" skillet over medium-high heat.
2. Add the summer squash slices, salt and pepper and toss with the olive oil until the summer squash turns bright yellow and becomes fork tender, about 5 to 8 minutes minutes. Remove from the skillet and serve.
