nonstick cooking spray
1 1/2 cups 2% milk
1 bay leaf
4 Idaho or russet potatoes
salt to taste
freshly ground black pepper
pinch ground nutmeg
Directions:
1. Preheat the oven to 350°F. Spray a baking dish with nonstick spray.
2. Peel and thinly slice the potatoes.
3. In a medium saucepan, combine the milk, bay leaf, nutmeg and potato and bring to a boil. Turn the heat down so that the mixture simmers, season with salt and pepper and cook for 10 minutes.
4. Pour the mixture into the prepared baking dish and cover with foil.
5. Bake for 25 minutes or until the potatoes are tender. Let stand for 10 minutes before serving.
